Nitrites in Meat Products in Serbia: Harmful or Safe?

- "The average nitrite content, expressed as sodium nitrite (NaNO2), was found to be 61.5 mg/kg in finely chopped sausages, 57.6 mg/kg in coarsely chopped sausages, 48.4 mg/kg in canned meat, and 41.8 mg/kg in smoked meat. The results collectively demonstrate nitrite concentrations within regulatory limits. In conclusion, the nitrite concentrations in all tested products were below the maximum allowable limits as per national and European regulations, ensuring compliance with safety standards while highlighting the importance of continuous monitoring to mitigate public health risks."

The feasibility and protocol compliance seen in SPAN 1 have been replicated in stage 1 of the second trial, SPAN 2.1. Mortality resembles previous experience, with an improved survival in aged mice. SPAN 2 has advanced to Stage 2 where improved dose timing is implemented."

These results elucidate the intrinsic mechanism of action of the compound curing agent from the perspective of protein changes, providing a scientific theoretical basis for the development and utilization of the compound curing agent."

- "Moreover, under Ketamine/Xylazine (Ket/Xyl) anesthesia, which reduced blood clot formation compared to CO2 euthanasia, 100 mM NaNO2 achieved the lowest hemoglobin levels in the brain. We have developed a method to efficiently evaluate blood-brain barrier integrity during transcardiac perfusion. The combination of Ket/Xyl anesthesia and 100 mM NaNO2 effectively removes residual blood from tissues without significantly affecting blood vessel permeability."
