Direct diazotization of indoles with 2-Methoxyethyl nitrite.
(PubMed, Commun Chem)
- "MOE-ONO showed higher reactivity and selectivity than conventional NO donors, even including tert-butyl nitrite or NaNO2/AcOH...The synthesized 3-diazoindoles exhibit broad reactivity, such as Grignard reaction at the C2-position and rhodium-catalyzed cyclopropanation at the C3-position. Such reactions can be practical solutions for synthesizing highly functionalized indoles and indolines, which are important for the design and discovery of pharmacologically active compounds."

Integrated metabolomics and volatilomics reveal the impact of compound curing agents on lipid-related metabolites and volatile compounds in Xuanwei ham.
(PubMed, Food Res Int)
- "To address these issues, this study investigated the effects of compound curing agents, specifically partial replacement of NaCl with KCl and NaNO2, with or without added sucrose, on the subcutaneous fat of Xuanwei ham...Correlation analysis revealed that the distinct aroma profile was associated with the curing agents' modulation of lipid β-oxidation, amino acid metabolism, and enhanced microbial ester synthesis. These findings provide a scientific basis for the development of low-sodium hams with stable color and optimized flavor."
